Leftovers - Radicchio lettuce cups

Directions for Dinner*
Cook couscous according to packet instructions; drain and leave to cool
Put corn on the cob in a microwave-safe bowl, cover and microwave on high for 2 mins. Let the steam settle, then remove cob from bowl. Slice kernels from cob with a sharp knife and leave to cool slightly
Place cooked couscous & corn into a large mixing bowl, with drained beans, red onion, red capsicum, tomatoes, coriander, chilli & avocado, drizzle with 1 tbsp of olive oil and toss lightly to combine.
Spoon vegetable mixture into radicchio leaves and garnish with extra coriander leaves.
Directions for Leftovers for Lunch
Spread the vegetable mixture over CORN THINS slices. Squeeze a little lemon over mixture for that extra zing & then enjoy.

1 cup pearl couscous
1 corn cob
400g can, no added salt 4 bean mix, rinsed, drained
1 small red onion, finely diced
1 medium red capsicum, diced
2 medium tomatoes, diced
1/2 cup coriander leaves, coarsely chopped (+ some for garnish)
1 small red chilli, seeded, finely sliced
1 small avocado, diced
1 bunch radicchio
