Roasted Pumpkin, Chorizo Crumb, Pesto & Rocket on Corn Thins slices

Directions

To roast the pumpkin simply season the pumpkin with salt & brush some oil onto all sides, then place in a baking try & cook in the oven at 180C for 40-60 mins, or till pumpkin is soft.

Spread a little pesto across each CORN THINS slice, then layer on some slices of pumpkin. Sprinkle on some chorizo crumb, then top with some rocket. Season with salt & pepper as desired.

Roast Pumpkin slices

Pesto

Chorizo crumb (supermarket bought or homemade)

Rocket leaves
