Roasted Pumpkin, Chorizo Crumb, Pesto & Arugula
To roast the pumpkin simply season the pumpkin with salt & brush some oil onto all sides, then place in a baking try & cook in the oven at 350F for 40-60 mins, or till pumpkin is soft.
Spread a little pesto across each CORN THINS slice, then layer on some slices of pumpkin. Sprinkle on some chorizo crumb, then top with some arugula. Season with salt & pepper as desired.
