Lemon Curd, Berries & Mint
Spread lemon curd across CORN THINS slices, then added berries. Finally top with a little mint.
Directions for Lemon Curd
Place all ingredients in a saucepan. Use a medium heat and whisk mixture till thick and first bubbles start to appear on surface of mixture (about 5-6mins, dependent on heat). Leave to cool. Put in fridge when not used.
2 CORN THINS slices
Lemon curd ( store bought, or using recipe here)
4 strawberries (sliced)
Few leaves of mint

1/4 cup of fresh lemon juice
1/2 Tbsp lemon rind (finely grated)
40g of butter
