Spiced Pumpkin Smash & Sesame Snaps
To make Spiced Pumpkin
Preheat oven to 204 C (400 F). Place pumpkin pieces into a baking tray lined with non stick baking paper. Bake for 35 - 40 minutes, or when pumpkin is tender (fork easily go into each piece). Remove from oven and put aside to cool. When cool enough to handle, scoop pumpkin from skin & place into a mixing bowl. Initially mash with a potato masher, then add molasses, butter cinnamon, allspice, + nutmeg & mix until smooth.
Now its ready to add to the CORN THINS slices. Add a generous amount of the pumpkin mash to each CORN THINS slice, then crumble a sesame snap onto each one for a delicious sweet, but nutritious treat
Put any unused mash in the fridge for later.
CORN THINS slices
1 kg of Jarrahdale pumpkin (with skin, cut in large slices/pieces)
2 Tbs molasses
1 Tbs butter
1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground nutmeg
Sesame snaps (store bought)
