Spread pulled pork across CORN THINS slices, then top with Coleslaw

 

Coleslaw Recipe Directions

Combine cabbage, carrot, onion, spring onion, corn kernels, celery & parsley in a large bowl. Mix well. Separately whisk mayonnaise, lemon juice, mustard in a small bowl. Add salt & pepper as desired. Finally, thoroughly mix the dressing with the salad...and it is ready to serve.

Ingredients

3 CORN THINS slices

Pulled pork (store bought, or left-overs)

Coleslaw (store bought, or recipe suggested here)

 

Ingredients for Coleslaw (this makes much more than needed, so put remainder in the fridge)

1/4 green cabbage (finely chopped)

1/2 large carrot (grated)

1/4 small onion (finely chopped)

2 spring onions (finely chopped)

1/4 cup fresh corn kernels

1 celery stalk (finely sliced)

1 1/2 Tbs of parsley (finely chopped)

1/4 cup of mayonnaise

1 tsp lemon juice

1 tsp Dijon mustard

Salt & pepper to taste
