Directions

This is a great recipe to use up leftover roast pumpkin.

 

Layer the sliced roast pumpkin across each Corn Thins slice, then add a few kale leaves. Sprinkle on some almonds, dried cranberries, feta & herbs, then drizzle on some zhoug.

Zhoug is quite spicy, so add depending on how spicy you like your food. Add salt & pepper as desired.

Enjoy.

3 Corn Thins slices

Leftover roast pumpkin (thinly sliced)

Zhoug (Zhoug Recipe)

Almonds (slightly crushed)

Dried cranberries

Feta

Kale

Fresh herbs (dill, coriander/cilantro, parsley - chopped)

Salt & pepper
