Potato, Goat's Cheese & Rosemary on CORN THINS slices for lunch or dinner

Directions

Boil potatoes for 8 - 15 mins, or when the potatoes can easily be pricked with a fork. Use waxy potato varieties such as Bintje, Desiree or Kipfler. Once potatoes are cool, put aside to cool, then slice.

Spread some goat's cheese across each CORN THINS or Ancient Grains slice, then layer on the sliced potato. Finally top with a sprig of rosemary.

P.S. the cooled potato is a perfect pre-biotic (resistant starch) for your gut
