Cheese Spread, Grilled Zucchini & Squash, plus Mint
Cook the zucchini & squash slices in a pan over medium heat using some olive oil. Cook on one side till you see the first appearance of browning, then flip over. Remove from the heat & pan one the other side is cooked. Put aside to cool.
Layer some cheese spread across each CORN THINS slice then add some zucchini & squash. Finally top with a leaf or 2 of mint & add some pepper & salt if desired.

1 small zucchini (thinly sliced)
1 small Squash (thinly sliced)
