Roast Chicken, Yoghurt, Coriander, Garlic, Lime, Rocket & Jalapeno
Make yoghurt mixture by combining yoghurt, garlic, lime juice & coriander (ensure this is mixed well). Make at least 1 hr before use & place in the fridge. This will help the flavour develop. Store any unused yoghurt mixture in the fridge for up to a week in a sealed container.
Spread yoghurt mixture across the CORN THINS slices, then layer on some chicken, then rocket. Lastly sprinkle on some of the sliced jalapenos. Add some salt & pepper if desired.
3 CORN THINS slices
Left over roast chicken (shredded)
250g Greek yoghurt
1 Tsp lime juice
1 clove garlic (finely chopped)
Coriander (few leaves finely chopped)
