BLT With Panko Fried Heirloom Tomato
To make the GF Panko fried tomatoes:
- In three separate shallow bowls, place the flour, eggs and bread crumbs. Dip tomatoes in flour, then in eggs; coat with bread crumbs.
- In an electric skillet or deep-fat fryer, heat oil to 375°. Fry tomatoes, a few at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels. Sprinkle with salt. Serve immediately.
Cook bacon in a fry pan with a small amount of oil or butter. Cook with a medium heat till the bacon starts to brown, then flip over & cook till the other side is brown. This should take a few minutes. Once cooked to desired level remove from pan and drain on paper towel.
Assemble your BLT by spreading some mayonnaise across each CORN THINS slice, then layer on the lettuce, Panko fried tomato and bacon. Now enjoy.
GF Panko Fried Tomato Ingredients
GF Panko Breadcrumbs or plain GF Breadcrumbs
3/4 cup of GF all purpose flour
3 eggs (lightly beaten)
2 Heirloom tomatoes (cut horizontally into 3 pieces)
Salt
Other Ingredients
3-4 rashers of bacon
6 CORN THINS slices
Lettuce
Mayonnaise
Oil or butter for cooking the bacon
