Pesto Scrambled Eggs with Polish Sausage
Lightly whisk the eggs & milk/water in a small bowl. Cook the Polish sausage in pan heated with the olive oil. Once the sausage is heated up & slightly cooked, transfer to a plate. Then use the same pan to heat up the pesto. Once heated add the egg mixture and stir the egg mixture around to mix in the pesto as the egg cooks. Once the egg is almost cooked, add in the cooked Polish sausage. Keep cooking & stirring till the egg is fully cooked and the sausage has been well mixed into the scrambled eggs. Season with salt & pepper, as desired, then spoon onto the CORN THINS slices.

60g Polish sausage (thinly sliced)
1 Tbsp Pesto
2 Tsp milk or water
2 Tsp olive oil
