Goats Cheese, Caramelised Leek & Bacon
To make caramelised leek, heat oil in large frypan over medium heat. Add leek and fry, stirring every few minutes, until golden and very soft (around 30 mins). Stir in caramelised balsamic vinegar and fry for a further 2 mins, then set aside.
Spread goats cheese over Corn Thins slices. Spoon 1 tbsp caramelised leek over each Corn Thins slice, then arrange two pieces fried bacon on top. Season with pepper.
80g chevre (goat’s cheese), crumbled
8 rashers bacon, fried
4 Corn Thins slices
Cracked black pepper
1 tbsp olive oil
4 leeks, white ends only finely sliced
¼ cup caramelised balsamic vinegar
