Heart Warming Broccoli Soup with Corn Thins Slices

This is a perfect heart warming soup that is great for those who don’t want to spend the whole day in the kitchen. This is a complete meal with the wholegrains from the Corn Thins slices, lean meat or alternatives from the seeds and tahini and a good serve of vegetables from the broccoli.

Ingredients
- 3-6 Corn Thins Slices
- 50g tahini (to top Corn Thins slices)
- 300g broccoli florets (frozen recommended to save time)
- 175ml salt reduced stock
- 1 tsp mixed seeds
- Pinch of black pepper
- 1 tsp no fat Greek yoghurt for decoration
Instructions
- In a small saucepan, place the broccoli and vegetable stock. Bring this mixture to the boil and then reduce the heat slightly to below a boil. Cook mixture for a further 10 minutes.
- Remove the broccoli mixture from the heat, season with black pepper and place mixture in a food processor or blender. Blitz until smooth.
- Serve in a bowl with seeds sprinkled on top an a dollop of Greek yoghurt. Add 3-6 Corn Thins slices to the side and top with Tahini
