Beetroot hummus, veggie bites & feta on Corn Thins slices

The produce for the month of May is a sweet and delicious vegetable which could almost be mistaken for a fruit. The produce which is in season and the produce of the month is beetroot.

Beetroot is not only beautiful to look at but is rich in nutrient for your body. This includes being a good source of magnesium and folate. Folate is a B vitamin which is needed to make and repair DNA. Magnesium is an essential mineral. It is involved in over three hundred and twenty-five different body functions. Also, antioxidants, flavonoids and bioflavonoids such as caffeic acid , betaine, ferulic acid and rutin. These which can help repair damage to the cells of your body from excess free radicals. This damage in excess can lead to disease states like cancer.

On top of these nutrients’ beetroot is a great source of dietary nitrates. Dietary nitrates can help your blood vessels widen or dilate. This improves the blood flow through your blood vessels and allows more oxygen and other important nutrients to be delivered throughout your body. As a result, this helps to lower your blood pressure.
