Dense Bean Salad
Make the dressing by placing oil, vinegar & sugar in a small bowl. Add a bit of salt & pepper & mix well. Place beans, onion and parsley in a large bowl, then add dressing and mix well. Taste. Add more salt & pepper if needed. Place in the fridge for 2 hrs for the dressing to soak into the beans for the best results.
Then simply spoon onto the Corn Thins slices for a popcorn flavoured crunch combined with a delicious beany salad.
6 - 8 Corn Thins slices
1 can of 4 bean mix (400 - 420g)
1 cup of cut green beans (raw, or gently cooked in salted hot water for 2 mins)
1 Tbsp red onion (finely chopped)
1 Tbsp extra virgin olive oil
1 Tbsp chopped parsley
40g of apple cider vinegar
1 1/2 Tbsp of sugar
Salt & pepper to taste.
