Grilled Zucchini, Parmesan, Capers & Mint

Directions
Brush zucchini slices with the oil & grill on a hot grill for 3 - 4 minutes. Turn over & cook for a further 1 min, or until zucchini is soft & flexible. Once cooked put zucchini aside to cool. Once cool add zucchini to CORN THINS slices, then crumble on Parmesan, capers & a few mint leaves. Season with salt & pepper if desired.

3 CORN THINS slices
1 Zucchini (cut in half & sliced thinly)
Parmesan (thinly sliced or grated)
Capers
Mint leaves
