This produce of the month is well known between the buns of a burger. The produce for the month of February is tomatoes. Tomatoes are at their best in February, offering peak flavour, colour, and nutritional value. They are a rich source of vitamin C, which supports immune health, collagen production, and iron absorption, as well as vitamin A in the form of beta-carotene for eye and skin health. Tomatoes also provide potassium, an important mineral for fluid balance, nerve function, and healthy blood pressure regulation.

One of the key nutritional highlights of tomatoes is lycopene, a powerful antioxidant responsible for their red colour. Lycopene has been linked to reduced oxidative stress and inflammation and is associated with improved heart health and protection against certain chronic diseases.
