Sauteed Spinach, Whipped Cream Cheese, Marinated Artichoke

To make whipped cream cheese
Ensure cream cheese is at room temperature before placing it in a mixing bowl of a stand up mixer. You can also use a hand held mixer. Add the milk, then mix/beat the mixture at higher speed for 2 - 3 minutes, or until the mixture is light & fluffy. This mixture can be used straight away. Any leftovers can be stored in the fridge in a sealed container for up to 1 week.
To make sauteed spinach
Simply head the olive oil in a fry pan and add the garlic. Cook the garlic for about 30 secs, or until it slightly browns, then add the spinach. Cook the spinach till it is soft, periodically stirring the spinach to ensure it is evenly cooked & the garlic doesn't burn. Add a little salt if desired. Once cooked remove from the stove & drain off any excess fluids.
To make sauteed spinach, whipped cream & artichokes on Corn Thins slices
Simple spread the whipped cream cheese across each Corn Thins slice, then layer on sauteed spinach & artichokes. Season with salt & pepper if desired, then enjoy.
12 - 6 Corn Thins slices
2 Tbps of whipped cream cheese
Marinated artichokes
Sauteed spinach
Salt & pepper for seasoning

200g of cream cheese
1Tbsp milk
To make sauteed spinach
2 bunches of spinach (stems removed & leaves cleaned)
2 Tbsp of olive oil
3 cloves of garlic (sliced of crushed)
Salt to taste
