Baked Cauliflower Pieces with Cheese on Corn Thins Slices

This recipe is not only delicious but will give your body a boost of nutrients too. The fat in the extra virgin olive oil not only give your body a heart healthy monounsaturated fat as well as antioxidants but will help your body to absorb the fat-soluble vitamins A, D, E and K. Vitamin K can be found in cauliflower and vitamin D and A is found in cheddar cheese and egg contain vitamins A, D, and E.

Eggs are a rich source of many nutrients including iron, the wholegrain sources in the meal also have iron. These plant-based iron sources are better absorbed by your body with vitamin C. This can be found in good amounts in the cauliflower.

Calcium is another example which needs a key to be absorbed better by your body. The vitamin D in the cheese and egg yolk will help your body to use and absorb calcium. Calcium is important for many reasons including supporting strong bones and allowing your muscles to contract normally.

This recipe has a team of nutrients which not only are healthy for your body to have as part of an overall balanced diet but work together for your body to reap the benefits of these nutrients fully. Not to mention it tastes delicious!

 

The Recipe (Serves: 3)

Ingredients

  1. 2 cups cauliflower
  2. 1 large egg
  3. 3 tablespoons wholemeal flour
  4. 1⁄4 cup low-fat cheddar cheese
  5. 1⁄4 teaspoon salt
  6. Extra virgin olive oil spray
  7. 3-6 Corn Thins slices per serve

Directions

  1. Preheat the oven to 400 degrees. Spray a baking sheet or line with parchment paper or foil with extra virgin  olive oil.
  2. Grate the cauliflower on large holes of a box grater.
  3. In a medium bowl add the cauliflower, egg,  wholemeal flour, cheese, and salt and mix well.
  4. Press mixture together to make about 15 small balls.
  5. Place on the baking sheet with space between each ball.
  6. Bake for 20 minutes or until cooked through.
  7. Serve on top of Corn Thins slices
  8. Enjoy!
