Chunky Guacamole, Pickled Onion, Feta & BBQ corn with Corn Thins slices

To make the guacamole simple thoroughly mix the avocado, finely chopped red onion, cilantro, lime juice, lemon juice, garlic & chilli together. While doing this, squish the avocado a little, so things mix better together. Taste & add salt as needed.

To make the grilled corn on the cob preheat a grill to high, then place the corn cob on the grill to cook, turning the cob often, till there is a char all over the cob. This should take about 10 mins. Once cool to touch, use a large knife to cut the corn from the cob.

Put the guacamole on a plate, or in a bowl. Add the grilled corn & pickled onion , then crumble on the feta. Enjoy with the Corn Thins slices, or Corn Thins Minis....or both.

Ingredients

1/2 pack or Corn Thins slices, or a pack of Corn Thins Minis

100g feta

75g pickled onion

2 Corn Cobs

3 avocado cut into 1cm chunks

Juice of 1 lime

Juice of 1 lemon

1/2 red onion, finely chopped

1 green chilli, seeds removed, finely chopped

1 garlic clove, crushed

1/2 cup cilantro (chopped)

Salt (to taste)
