Green Olive, Walnut & Pomegranate Salad

Once the salad is made add a generous amount of the salad to each Corn Thins slice. 3 slices per person...if you can stop at 3 slices.

Ingredients for the Salad
75g walnuts
60g pitted green olives (coarsely chopped)
35g pistachios (coarsely chopped)
1/2 cup pomegranate seeds
2 small shallots (peeled & finely diced)
1 red bullet chilli (seeded & finely diced)
1tpsp parsley leaves (finely chopped)
1 tbsp olive oil
1 tbsp walnut oil
Splash pomegranate molasses
1/2 lemon (juice only)
salt & pepper (if desired)
