Tiramisu

Combine cottage cheese, vanilla bean paste and sugar in a blender, blitz on low until smooth.
Combine 500ml boiling water with instant coffee, dip Corn Thins slices, 2 at a time, for 2-3 seconds. Layer the two coffee-soaked Corn Thins slices into the bottom of a wide glass (you may need to cut them to shape depending on the size of your glasses).
Spoon over 3 tbsp of the whipped ricotta then repeat the layers twice more.
Repeat this process for each serving.
Dust the tops with cocoa powder and sprinkle with cacao nibs to serve.
You can pre-make & cool in the fridge before serving
500g full fat cottage cheese
1 tsp vanilla bean paste
55g coconut sugar
2 tbsp instant coffee
150g Corn Thins Original slices
Cocoa powder and cacao nibs, to decorate
