Corn Thins slices topped with Tabouli

Directions
- Soak the bulgar wheat (or Quinoa) in boiling water for 10-20 minutes, covered. If using Quinoa, rinse before boiling.
- Drain and squeeze out the excess water.
- Combine all ingredients and mix well.
- Top your desired number of Corn Thins slices with tabouli.
- Enjoy!
Ingredients
1 packet of Corn Thins slices
1 large bunch of parsley, finely chopped
1 small bunch of mint, finely chopped
3 tomatoes, diced
3 spring onions, finely chopped
1/3 cup extra virgin olive oil
Juice from 1-2 lemons
3 tablespoons of bulgar wheat (or Quinoa as a GF alternative)
