Tofu Scramble with Tomato

Directions
- Place the turmeric, black pepper and silken tofu into a small mixing bowl and whisk together until a smooth and creamy texture has been created.
- Chop the firm tofu finely and fold into the silken tofu mixture.
- Heat a medium frying pan and spray lightly with the extra virgin olive oil spray.
- Pour the tofu mixture into the frying pan and stir gently for 5-8 minutes or until the mixture has become a scrambled texture.
- Add the cherry tomatoes and cook for an additional minute.
- Serve on top of 3-4 Corn Thins slices.
- Enjoy!

3-4 Corn Thins slices
80g silken tofu
60g firm tofu (calcium set)
4-5 cherry tomatoes sliced in half
0.25 tsps ground turmeric
Pinch of pepper
