BLT Breakfast Bowl with Fried Egg & Guacamole
Fry the eggs in a pan over medium heat with 1 tps of oil. This should only take a few minutes depending on how much you like the yolk cooked. Once cooked, put aside on a plate. Then using the same pan, with another tbs of olive oil, cook the bacon & tomato. Stir bacon occasionally & flip the tomato pieces when each side has slightly browned. Once cooked as desired, move to the plate with the eggs.
Assemble your BLT by spreading a generous amount of guacamole onto each Corn Thins slice, then add a lettuce leaf, then the tomato & bacon. Finally add the eggs & season with salt & pepper, if desired. Enjoy.
3 Corn Thins slices
3 TBS Guacamole (Guacamole Recipe)
1 piece of bacon (cut into small pieces)
1 Tomato (thickly sliced, 1cm)
3 lettuce leaves
2 eggs
2 Tbs Olive oil
Salt & pepper for seasoning (if desired)
