Directions
Drain liquid from jar of Sicilian Olives, then place the olives on a bread board. Gently smash/break up the olives with a fork or meat cleaver. Once smashed, transfer the olives to a small bowl and mix with the lemon zest & olive oil. Season with salt & pepper to taste.
Distribute the olive mix across the CORN THINS slices, then top each slice with the salmon. Add extra salt & pepper if desired. Enjoy.

280g jar of Sandhurst Sicilian Olives
150 - 200g smoked salmon
1 Tsp lemon zest
1 Tbs extra virgin olive oil
Salt & pepper for seasoning
