Broad Beans, Olive Oil, Lemon, Mint & Burrata on Corn Thins slices

If broad beans are fresh, blanch the beans in boiling water for 30 - 60 secs, then put in a small bowl to cool slightly. Whisk the olive oil & lemon together in another small bowl, then mix with the broad beans & mint. Spoon broad bean mixture onto the Corn Thins slices & add some burrata. Add some seasoning if desired. Enjoy


4 - 6 Corn Thins slices

300g of broad beans

200g of Burrata

2 tbsp of lemon juice

4 tbsp of olive oil

pinch salt

1 tsp chopped mint
