Heirloom Tomato, Blood Orange, Mint & Passionfruit
To make the dressing, whisk the balsamic vinegar, lemon juice, lemon zest & salt together in a small bowl, then whisk in the olive oil until the dressing emulsifies.
In a larger bowl, add the mint, passionfruit, tomato and orange pieces. Mix well, then add the dressing & mix again.
Then top the Corn Thins slices with the mixture & enjoy this refreshing lunch.
8 - 12 Corn Thins slices
500g Heirloom tomato (cut into 1/2 - 1cm pieces)
250g Blood Orange (cut into 1/2 - cm pieces)
3 Passionfruits
1 tbsp finely chopped Mint leaves
1/2 tbsp white balsamic vinegar
1/4 tsp grated lemon zest
1/2 tsp lemon juice
Pinch of salt
1 tbsp Olive oil
