Spread jam between the bases of 2 serving glasses.
Preheat a BBQ or chargrill pan to high, grill peaches cut-side down, until caramelised. Arrange 2 halves into each glass.
Top with a generous scoop of vanilla ice cream and a sprinkle of Corn Thins crumbs. Sprinkle over a tiny bit of sea salt to serve.
