Health Benefits of this recipe

This meal is a powerhouse of health benefits for your body. Starting with the healthy monounsaturated fat from the extra virgin olive oil which will also provide 36 different antioxidants. The eggs provide your body with not only protein but many vitamins and minerals including vitamins A, D, E and K. The fat in the oil allows these fat-soluble vitamins to be absorbed properly in your body.

The milk, cheese and eggs work as a great combination as milk and cheese provide your body with calcium which is needed for strong bones and teeth. It needs vitamin D which is found in the egg yolk to be absorbed properly in your body.

The fiber found in the Corn Thins slices is added to by the tomatoes. Tomatoes are also a good source of vitamin C which helps the non-haem iron or plant-based iron found in the Corn Thins slices to be absorbed better in your body. These examples show how foods may be powerful alone but together can further enhance the health benefits that your body receives.

 

Ingredients

6 Corn Thins slices

¼ cup of low-fat milk

½ tsp extra virgin olive oil

2 large eggs

½ cup chopped cherry tomatoes

2 tbs grated cheddar cheese

Herbs and spices to season

 

Directions

  1. Place 3 Corn Thins slices into a food processor process until a crumb.
  2. In a mixing bowl whisk the eggs, half the cheese and milk. Add herbs and spices.
  3. Heat grill to high temperature.
  4. Place extra virgin olive oil into a skillet on medium heat.
  5. Add the Corn Thins crumb into the pan and shake to spread out over the entire pan.
  6. Add the mixture from the mixing bowl into the pan making sure the mixture covers all the way to the edges of the pan.
  7. Sprinkle the remaining cheese on top of the mixture.
  8. Cook the mixture for 3 minutes
  9. Place the pan into the over and grill until golden brown on top (approximately 2 minutes).
  10. Remove from the grill and allow to cool until warm.
  11. Serve with 2-3 Corn Thins slices on the side and enjoy!
