Refried Beans, Tomato & Capsicum Salsa, Fried Egg & Coriander
Mixed the tomato, capsicum & vinegar dressing in a small bowl, then fry the eggs they way you like them.
Per person - spread a generous amount for refried beans across each of 3 CORN THINS slices, the layer on 1 - 2 of the fried eggs. Cover with some of the tomato/capsicum salsa, then garnish with some parsley. Season with salt & pepper as desired.

Refried beans (try Old El Paso)
1 small red or orange capsicum (de-seeded & chopped finely)
2 small tomatoes or a couple of handfuls of cherry tomatoes (chopped up)
1tsp vinegar dressing
Parsley to garnish
