Corn Thins crunchy breakfast clusters

Health Benefits of this Recipe:

This meal is a good choice as it not only has the health benefits of the whole grains that are used to make Corn Thins™ slices, but the healthy fats found other ingredients (hazelnuts, extra virgin olive oil and sunflower seeds). The hazelnuts and sunflower also add additional fibre and protein. This will help to keep you feeling fuller for longer by lowering the GI or glycaemic index of the meal. If you add milk this will add even more protein to increase the satiety of the meal.

The non-haem iron found in whole grains are better absorbed with vitamin C. This is found in the dried raisins. Cinnamon and ginger add antioxidants to help fight off free radicals which can cause damage and disease to the cells of your body. The ginger will also help to sooth the gut. It is important to know how the meal affects your body. As we tend to eat not just single foods but a combination together. This combination can enhance the health benefits that your body will receive.

 

 

Makes: 20 serves (½ cup each serve)

Time to prepare: 30 minutes

 

Ingredients

1 bag of Corn Thins™ or Rice Thins™ slices

1 tsp ground ginger

¼ tsp ground cinnamon

¼ tsp salt

½ cup of honey

½ cup of grapeseed oil

½ cup of dried raisins

1 cup of sunflower seeds

1 cup of hazelnuts (or your favourite nut) chopped roughly

 

  1. Preheat your over to 160 degrees Celsius.
  2. Place Corn Thins™ slices in a food processor and process until medium crumbs
  3. Place Corn Thins™ crumb, hazelnuts, sunflower seeds, and raisins into a mixing bowl.
  4. In a separate bowl add extra virgin oil, honey, salt, ginger, and cinnamon. With a fork whisk and then pour into bowl with Corn Thins™ mix.
  5. Line a baking tray with baking paper and pour the mix onto the baking tray.
  6. Place tray into the oven and bake for 10 minutes.
  7. Remove the tray and with a spatula move the mixture so the outside parts are moved into the centre and the centre parts are pushed outwards.
  8. Bake for a further 10 minutes.
  9. Stir again.
  10. Bake for a final 8-10 minutes. The mixture should now be golden roasted and evenly baked.
  11. Remove the mixture and press mixture firmly down to help to create clusters.  Allow the mixture to cool.
  12. Break final product into pieces and store in an airtight container until ready to use.
