To make the dressing simply mix all the dressing ingredients thoroughly. Make this first so that all the flavours have had time to blend prior to adding to the salad.
To prepare the beef, first combine marinade ingredients in a bowl& mix well. Then add beef & set aside for 10-15 mins to marinate. Cook the beef by frying in a pan with the vegetable oil. On high heat this should take about 3-4 mins each side (medium/rare). Once cooked rest meat for about 10 mins, the cut into thin slices.
Now simply mix the onion, peanuts, tomato, spring union, cucumber, mint & cooked beef in a bowl and add dressing. Mix well, then layer onto the CORN THINS slices. Finish off with a few leaves of coriander. The popcorn flavour & crunch of the CORN THINS slices is a deliciously different way to enjoy this salad.
3 CORN THINS slices
200g beef rib eye steak
1/2 Tbsp vegetable oil
1/2 small onion (finely sliced)
1/2 small cucumber (sliced)
1 small tomato (cut into wedges)
1/4 cup mint leaves
1/4 cup spring onion (finely sliced)
Tbsp of crushed peanuts
Coriander
Marinade
1/2 Tbsp fish sauce
1/2 tsp shaved palm sugar
1/2 clove garlic (crushed)
1/2 large red chilli (deseeded & finely chopped)
Dressing
2 Tbsp fish sauce
1 Tbsp shaved palm sugar
1 Tbsp lime juice
1/2 clove garlic (crushed)
1/2 large red chilli (deseeded & finely chopped)
