If you are looking for a taste sensation which also is packed full of health benefits this is the recipe for you! Your body is complex and needs different antioxidants to stay healthy. This is one of the reasons including a variety of foods is important as each food gives your body different antioxidants. Some include the vitamin E in the pine nuts, vitamin C in the chilli flakes and onions, and a variety of antioxidants can be found in the pepper, onion, garlic, coriander, extra virgin olive oil as well as in the Corn Thins slices. Ingredients

 

½ cup extra virgin olive oil

2 tsp dried chilli flakes

2 cloves garlic, finely minced

1 spring onion, finely sliced

1 tbsp toasted pine nuts

½ tsp black pepper

2 tbsp fresh coriander, chopped

1 cup Greek yoghurt

24 Corn Thins slices

 

Directions

  1. In a small pot place the extra virgin olive oil and heat over medium heat at 180 degrees Celsius.
  2. In a heatproof bowl add the chilli, garlic, onion, pine nuts, and coriander. Pour in the heated extra virgin olive oil. Season with pepper.
  3. In a bowl add ¼ cup of yoghurt and ¼ of the mixture on top. Serve with a side of 6 Corn Thins slices
  4. Enjoy!
