Guacamole Dip with Corn Thins slices

Are you entertaining soon? It can be difficult to pick a platter which is tasty and helps to keep your blood sugar levels in a healthy range. Here is a must-save blog to use whenever you have visitors over or need a platter to bring to a celebration or event.

Corn Thins®

A smart choice to add to your platter are Corn Thins slices. In 3 slice of Corn Thins Original there is 12.8g of carbohydrates and includes 1.3g of dietary fibre. Good news for your heart health is it has lower than 400mg of sodium per 100g with only 259mg per 100g. A bonus is there is no gluten present so is appropriate if you have celiac disease or are gluten intolerant.

Veggie Sticks

Adding vegetable sticks are a great way to add in extra fiber for fullness and fiber also helps to slow the release of sugar into your blood. Some ideas could be carrot, celery, capsicum, or cucumber sticks.

 

The Dip

There are many dips you can select, here is an example of a low carb guacamole dip.

Ingredients

3 ripe avocados

1 finely chopped small red onion

8 cherry tomatoes sliced in half

½ bunch of finely chopped coriander

Lemon and lime juice

Salt and pepper

Chilli powder or tobacco sauce

 

Directions

  1. Place peeled avocados in a bowl and mash until a smooth consistency.
  2. Add a squeeze of lemon and lime juice and desired amount of chilli powder or tobacco sauce and blend together until smooth.
  3. Add in the chopped onions, cherry tomatoes and coriander and mix in.
  4. Serve guacamole dip in a bowl on a platter surrounded by your favourite chopped vegetable sticks and Corn Thins slices.
  5. Enjoy!

 

Combine for a Low GI Load

By combining the Corn Thins slices and dip or veggie sticks and dip together this adds in healthy fats and fibre together. Adding in a combination of factors together slows the release of blood sugar further. A bonus to adding a great taste combination!
