This produce of the month could be considered the king of versatility. Beetroot has a delicious sweet taste which means it can be used in many dishes from salads, enjoyed BBQed, in muffins, or as a dip.  Beetroot is also low in calories with 100g serve of boiled beetroot around 44 calories.

Beetroot is a rich source of folate which is needed to make and repair your DNA. Also, nitrates which support healthy blood pressure by helping your blood vessels to relax. Athletes use beetroot juice for its nitrates to improve endurance performance. Beetroot is also a good source of manganese. Manganese is needed to help your body make connective tissue, helps to create compounds which allow your blood to clot normally, and also plays a role in carbohydrate and fat metabolism.

As a source of fibre beetroot helps you to meet your 25-38g of dietary fibre recommendations for gut health. 100g of boiled beetroot provides around 2g of fibre. This is one reason to enjoy the whole food over processed juice when possible which often has the fibre component removed. There is so much to love about the produce of the month, make sure you add beetroot to your shopping list for this week.
