This is a delicious and nutritious recipe that is simple to make and goes so well with the subtle popcorn taste of Corn Thins slices
3 Corn Thins slices
2-3 Tbsp whipped ricotta
1 zucchini (thinly slices the long way)
Handful of shelled pistachios (crushed)
Mints leaves
1 Tbsp olive oil
Brush zucchini slices with the oil & grill on a hot grill for 3 – 4 minutes. Turn over & cook for a further 1 min, or until zucchini is soft & flexible. Once cooked put zucchini aside to cool. Once zucchini has cooled, spread the ricotta across each Corn Thins slices, then layer on the zucchini & sprinkle with the crushed pistachio nuts. Add a little mint. Season with salt & pepper if desired.
