A delicious twist on a traditional Tiramisu recipe to include the moreish popcorn flavour of Corn Thins slices. They are also Gluten Free, so more people can enjoy this.

Ingredients

500g full fat cottage cheese

1 tsp vanilla bean paste

55g coconut sugar

2 tbsp instant coffee

150g Corn Thins Original slices

Cocoa powder and cacao nibs, to decorate

Directions

Combine cottage cheese, vanilla bean paste and sugar in a blender, blitz on low until smooth.

Combine 500ml boiling water with instant coffee, dip Corn Thins slices, 2 at a time, for 2-3 seconds. Layer the two coffee-soaked Corn Thins slices into the bottom of a wide glass (you may need to cut them to shape depending on the size of your glasses).

Spoon over 3 tbsp of the whipped ricotta then repeat the layers twice more.

Repeat this process for each serving.

Dust the tops with cocoa powder and sprinkle with cacao nibs to serve.
