6 CORN THINS slices
3 tbsp tahini
2 tbsp honey
1 tbsp sunflower seeds
1 tbsp hemp seeds, plus extra for the top
½ tsp vanilla extract
Line a 14 x 14cm square baking tin or larger (for a thinner option) with greaseproof paper.
Crush CORN THINS slices into small pieces in a mixing bowl using your hands, then add the sunflower and hemp seeds.
Add tahini, honey and vanilla to a cup and place on the stove to heat until it becomes loose, or in the microwave and heat at 30-second intervals, mixing with a fork in between to loosen the mixture (this is a good option if cooking with kids).
Pour the honey tahini over the Corn Thins crumb and seeds and mix well using a fork. Press the mixture into the lined baking tin and place in the freezer to set.
Slice, serve and store in the freezer for up to 3 weeks.
