1 fillet of smoked mackerel (shredded)
1 cooked or canned beetroot (cut into cubs)
1/3 green apple (finely chopped into straw shaped pieces)
2 tsp olive oil
1 tsp lemon juice (maybe more depending on taste)
50g Sliced almonds
3 CORN THINS slices
1/6 red onion (finely sliced)
Sprigs of dill
salt & pepper
To Make Salad
Mix onion, mackerel, beetroot, apple & almonds in a bowl, then squeeze in lemon juice & drizzle with oil. Mix further & taste. Add additional lemon juice if necessary, plus salt & pepper
Once salad has been made, just add to CORN THINS slices for a delicious salad with the popcorn taste of CORN THINS slices. Final top each slice with a sprig of dill
