This makes a beautiful gift-giving idea at Christmas time, but we can’t blame you if you keep it all for yourself!
100g whole roasted and unsalted almonds
12 Corn Thins slices, roughly crushed
250g rosewater Turkish delight, coarsely chopped
200g marshmallows
40g dried cherries or cranberries
450g good quality dark chocolate, melted
Lightly grease a 20cm square cake tin. Line with baking paper.
Combine almonds, crushed Corn Thins slices, Turkish delight, marshmallows and cherries in a bowl and mix well to coat. Sprinkle about 1 cup of the mixture into the bottom of the prepared tray.
Add melted chocolate to the remainder of the nut mix and stir well to coat. Transfer to the prepared tin, using a spatula to smooth the surface.
Refrigerate for at least 3 hours or until set firm then invert onto a clean work surface, remove baking paper and cut the slice into 8 pieces.
