Roast Pears Crumble Using Corn Thins Slices

A delicious twist on your usual crumble, by using Corn thins slices which add a moreish popcorn taste to this popular dish

Ingredients

6 ripe pears, halved

60ml maple syrup, plus extra to serve

125g butter

55g caster sugar

100g mixed nuts

6 CORN THINS Original slices, roughly broken up

125g gluten-free flour

1 tsp mixed spice

Pinch sea salt

Vanilla Greek yoghurt, to serve

Directions

Preheat oven to 180ºC. Line a baking tray with foil and arrange pears face-up. Drizzle with maple syrup and place a small square of butter onto each pear. Cover with foil and roast for 30 mins.

Meanwhile, melt the remaining butter. Combine in a food processor with sugar, nuts, CORN THINS slices, flour, mixed spice and sea salt. Pulse until the mixture is a course crumb.

When pears are done, remove from oven and take off top layer of foil. Spoon the crumble over the top of the pears and return to the oven for 25 mins or until the crumble is golden.

Serve pears with vanilla Greek yoghurt.
