Pineapple & Mango Slice

This is a fun & nutritious snack to make at home with the kids. Perfect for lunch boxes, as they contain loads of fruit, nuts and fibre, as well as the popcorn flavour of Corn Thins slices.

Ingredients

35g of CORN THINS slices

85g roughly chopped dried mango

85g roughly chopped pineapple

1 cup coconut flakes

1 tablespoon hemp seeds

2 cups macadamia nuts

⅓ cup melted coconut oil

1¼ teaspoons salt

Directions

1) Add the CORN THINS slices, pineapple and mango into a food processor and process until fine consistency.
2) Add the nuts and pulse until coarsely chopped.
3) Add the coconut flakes, oil, hemp seeds, and salt.
4) Pulse until the mixture becomes a rough purée consistency.
5) Transfer mixture to a plastic wrap-lined rimmed baking sheet.
6) Top with another piece of plastic wrap and press to a 9×6″ rectangle.
7) Chill the mixture until firm.
8) Cut into 12 bars.
