6 CORN THINS slices
1 ripe pear (thinly sliced)
1 small cooked or canned beetroot (diced)
60g Persian feta
Large handful of rocket
Few walnuts (chopped)
Vinaigrette (optional)
Mix beetroot, feta, rocket & walnuts in a separate bowl. Add vinaigrette if desired.
Once salad mixture made, add pear to CORN THINS slices, then top with salad mix.
