2 Corn Thins slices, crushed very finely
90 g rolled oats (GF)
60 g desiccated coconut
60 g smooth peanut butter or almond butter
115 g golden syrup
40 g unsalted butter
½ teaspoon bicarbonate of soda
Pinch of sea salt
Combine the crushed Corn Thins slices, oats, coconut and salt in a bowl.
Combine the butter and golden syrup in a small saucepan and heat gently until melted. Stir through the peanut butter or almond butter until smooth.
Dissolve the bicarbonate of soda in 1 tablespoon of boiling water, then stir into the warm syrup mixture.
Pour the wet mixture into the dry ingredients and mix until everything is evenly coated and slightly sticky.
Roll into compact balls and refrigerate for at least 30 minutes to firm up.
