Nachos using Corn Thins Minis

The delicious popcorn taste of Corn Thins products make them the perfect, healthy replacement for corn chips with Nachos.

Ingredients

Nachos Ingredients

2 packets Cheddar Corn Thins Minis

500g beef mince

2 tbsp taco seasoning

125g tin black beans, drained and rinsed

115g grated cheese

To Serve Ingredients

Jar of salsa

1/4 thinly sliced red onion

12 – 16 halved cherry tomatoes

1 thinly sliced radish

1 -2 thinly sliced jalapeno

20 – 30g crumbled feta

1 Tbs chopped coriander

Directions

Preheat oven to 200ºC/400F. Pour the Corn Thins Minis onto a baking tray.

Fry beef mince in a non-stick frypan over high heat. Add taco seasoning and black beans and cook until the beef is cooked through. Scatter the beef mixture over the Minis.

Scatter cheese over the mince and bake for 10 mins.

To serve, spoon over the salsa then garnish with onion, tomatoes, radish, jalapeno, feta and coriander. Serve with lime cheeks.
