This salty, sweet & creamy recipe goes perfectly with the delicate popcorn flavour of Corn Thins slices. Enjoyable with friends to snack on, or for lunch.
600g thinly sliced olive mortadella (16 slices)
High smoke point oil spray
500g smooth ricotta
15g extra virgin olive oil
Juice of ½ lemon
½ tsp sea salt flakes
Hot honey, to serve
Corn Thins slices, to serve
You’ll need 4 wooden skewers for this recipe
Fold the mortadella in half, then in half again to form a long log. Fold the log in half then in half again, then thread onto a skewer. Repeat this process so that each skewer has 4 pieces of mortadella. Spray all sides with oil.
Preheat a BBQ or large chargrill pan to high.
While the BBQ is preheating, combine ricotta, olive oil, lemon and salt in a food processor or blender and blitz until smooth and fluffy.
Spoon the whipped ricotta into a serving bowl, drizzle with hot honey.
Grill the mortadella skewers on all sides until crispy. Serve with the whipped ricotta and Corn Thins slices.
