Looking for something that is light and tasty, then try the delicious charred taste of broccoli, balanced with a squeeze of lemon, plus the crunch of the almond and popcorn taste of the Corn Thins slices. Something the whole family can enjoy.
1 small branch of Broccoli
1 lemon
2 Tbsp olive oil
50g of flaked almond
3-4 Corn Thins slices
Pepper & salt (to taste)
To make charred broccoli, first marinade broccoli in some oil & lemon juice (from 1/2 a lemon) for about 5 mins. Then using either a grill plate or fry pan cook broccoli on high heat till lightly browned. Set aside to cool.
Cut up the charred broccoli and spread across the Corn Thins slices, sprinkle on the flaked almonds, the squeeze the remaining lemon juice over the top of each slice. Add a little salt & pepper, if desired.
