This is a super healthy and tasty meal, that goes perfectly with the delicious popcorn taste and crunch of Corn Thins slices
2 cups cauliflower
1 large egg
3 tablespoons wholemeal flour (or GF flour mix)
1⁄4 cup low-fat cheddar cheese
1⁄4 teaspoon salt
Extra virgin olive oil spray
3-6 Corn Thins slices per serve
1) Preheat the oven to 400 degrees. Spray a baking sheet or line with parchment paper or foil with extra virgin olive oil.
2) Grate the cauliflower on large holes of a box grater.
3) In a medium bowl add the cauliflower, egg, flour, cheese, and salt and mix well.
4) Press mixture together to make about 15 small balls.
5) Place on the baking sheet with space between each ball.
6) Bake for 20 minutes or until cooked through.
7) Serve on top of Corn Thins slices
